Summary of Client

The client operates multiple restaurant locations and continues to expand into new market areas that have been underserved by her menu. For the Carmel location, she wanted a space that felt energetic and welcoming while still supporting efficient service and a strong dine in experience. The former fitness space offered generous volume and visibility, creating an opportunity to introduce a more immersive restaurant environment anchored by warmth, texture, and layered lighting

Project Goals

The primary challenge was converting a former fitness center into a functioning restaurant with all new kitchen equipment, bar infrastructure, and dining areas. The layout needed to support the maximum allowable occupant load while balancing seating capacity with the operational needs of the kitchen and bar. Another goal was to create a lively atmosphere within a defined budget, using materials and lighting that would bring character to the space without requiring extensive structural changes.

Our Solutions

Progress Studio evaluated the maximum allowable occupant load for the space, which guided decisions around dining layout, bar seating, and circulation. This approach helped establish the appropriate balance between front of house seating and back of house kitchen and support areas.

To bring energy and identity into the interior, we focused on cost conscious design elements that deliver visual impact. Green tile walls introduce a biophilic reference and serve as a backdrop for open shelving behind the bar, where bottles and glassware become part of the overall composition. Warm wood seating, built-in banquettes, and a mix of table configurations support both casual dining and group seating.

Lighting was layered throughout the restaurant using pendants, linear fixtures, and accent lighting to define zones and create a welcoming atmosphere from day to night. Wall art and graphics add color and personality while reinforcing the brand’s presence within the space. The finished interior transforms the former fitness center into a vibrant restaurant environment that supports both operational needs and an engaging guest experience.
